Baked Ham with Cherry Glace

Ingredients:

  • 2 cups stewed or frozen cherries
  • 3/4 cup juice from cherries
  • 11/2 tblspns cornflour
  • 3/4 cup burgundy
  • 2 tblspns vinegar
  • 2 tblspns liquid glucose
  • 2 tblspns lemon juice
  • 1 tinned ham (1 kg or 2 kg)

Method:

1. Drain and pit cherries.
2. Place cherry juice and cornflour in a small saucepan and stir until smooth.
3. Add the burgundy, vinegar and liquid glucose and bring to boil over medium heat, stirring constantly.
4. Stir in lemon juice and cherries.
5. Cut canned ham into slices . Place in shallow roasting pan and tie with string to hold in shape.
6. Glace ham with burgundy sauce
7. Bake at 350 F. for 30 mins for 1 kg ham, 45-60 minutes for a 2 kg ham.
